Rotwein<\/li>\n<li>200 ml Gefl\u00fcgelfond<\/li>\n<li>Salz und Pfeffer<\/li>\n<\/ul>\n<p>Speck und W\u00fcrzgem\u00fcse fein w\u00fcrfeln und in Oliven\u00f6l gut anbraten, rausnehmen und aufheben, dannauch das in St\u00fccke geteilte Kaninchen im selben, eventuell erg\u00e4nzten Fett anbraten, salzen undpfeffern; die H\u00e4lfte des Rosmarins dazugeben, beiseite schieben, die H\u00e4lfte des Rotweins nach undnach in die Mitte gie\u00dfen und weitgehend verdampfen lassen, Fond und restlichen Wein angie\u00dfenund bei kleiner Hitze Fleisch zugedeckt 1 Std. garen lassen \u2013 gelegentlich wenden. W\u00e4hrenddessendie Bohnen enth\u00fclsen und jetzt zum Fleisch geben, ebenfalls Speck, W\u00fcrzgem\u00fcse, Chorizo undOliven.
