Fischw\u00fcrfel in Wermut kr\u00e4ftig anbraten, aber ohne Farbe nehmen zu lassen, Knobi und Rosmarin kurz dazu und mit Cognac flambieren, (nicht zuviel) Br\u00fche und Wein angie\u00dfen, w\u00fcrzen und kochend garen lassen; Sauce mit etwas saurer Sahne abschmecken.
